Ice creams are popular in modern times. But there is a significant place and importance for home made kulfis, Kulfi is traditional Indian style ice cream; in early times when there was no ice cream, preparation of kulfi was only one option available for cool serves.
It is very easy to prepare; the milk is simmered till it is reduced to half and we get a deep rich cream colour. No essence and preservatives are generally added. It is made further rich by adding dry fruits, fresh fruits and saffron for natural colour. It is normally set in special cone shaped moulds, in earthen pots and even in small size kitchen bowls.
Though with the change in times, professionals have started making different versions, with the additions of natural and artificial colours, essence and preservatives so that kulfi can be stored for a longer time.
I have tried to present here a variety of kulfis which are easy to make with the use of few ingredients. They can be consumed in small quantity even everyday. Happy eating!!!

Lemon-Blueberry Cake
This is one of my most tried-and-true cake recipes and it's one of the few recipes that has transcended my switch to a healthier lifestyle and made that journey with me. It used to be a bundt cake and then we had a potluck Thursday for someone's birthday at work and I decided to make it in a two-layer form and "ice" it with a whipped topping/pudding combination that I became fond of after starting Weight Watchers. I was shocked at how popular it was. Women were practically clawing each other's eyes out to get at this cake. Well. Not really. But you know.
I gave out a ton of copies of recipes and I could not believe this shit, but word traveled about this cake so much that a couple of people from other locations actually e-mailed me to ask for the recipe for this cake they had heard about second hand. I was completely floored.
Lemon-Blueberry Cake
Ingredients:
* 1 box white cake mix
* 1 oz box fat free, sugar free lemon instant pudding mix
* 1 cup egg substitute
* 1 cup nonfat sour cream
* 4 tbsp Land O Lakes light butter, melted
* 1/3 cup lemon juice (about 2 medium sized lemons)
* 1 tbsp grated lemon zest
* 8 oz blueberries (fresh or frozen)
Optional Icing:
* 1 oz box fat free, sugar free lemon instant pudding mix
* 1 cup skim milk
* 1 8 oz tub Cool Whip Free
Directions:
1. Preheat oven to 325 degrees.
2. Combine all ingredients except blueberries and beat on low for 1 minute. Scrape sides and beat on medium for 2 minutes until fluffy.
3. Fold blueberries into batter and spoon into a prepared bundt pan (OR: two layer cake pans). Bake 55 to 65 minutes or until done for bundt cake, closer to 30 minutes for a layer cake.
4. Cool 20 minutes in pan on rack, then invert onto rack. Cool completely before cutting if making bundt cake, or before icing, if making layer cake.
5. For icing, beat the pudding mix and milk together until thick, 1-2 minutes. Then stir the cool whip in and use it to fill and ice the cake.
16 servings: 178 calories / 4 grams fat / 0 grams fiber = 3.8 WW points per serving
And if you want something richer and aren't watching calories, use the regular non-light versions of the dairy and pudding ingredients. And hey, use lemon-flavored buttercream. Go for it.
